Follow The Directions“蛋糕面包”介于蛋糕和面包之间,是一种结合了柔软绵密与蓬松弹性的复合型口感。
Step 1
面包部份:先将面粉、糖、盐、奶粉及即溶酵母混合。Bread: Combine flour, sugar, salt, milk powder and instant yeast.
Step 2
倒入水,拌成粗糙的面团,加入牛油。Pour in water & combine evenly, then add in butter.
Step 3
再将面团揉成光滑有弹性的面团,静置40分钟发酵。Knead into a smooth & elastic dough. Let the dough ferment about 40 mins .
Step 4
分割成每个100克等份,滾圆,用布盖好发酵5分钟,捍长卷起,放入圆模內,最后发酵40-50分钟。Scaling dough 100g each and moulding, resting for 5 mins, roll into oval shape and place into greased tin. Final proof: 40-50 mins.
Step 5
蛋糕部份:海绵蛋糕粉加蛋和水打10-15分钟至发,加入油拌勻成面糊,倒在发好的面包上,以180℃烤25分钟。Sponge cake: Beat sponge mix flour, eggs and water till fluffy, add in cooking oil and stir till even. Pour the sponge cake mixture into bread tins. Bake at 180℃ for 25 mins.
